Nutty Shrimp Lettuce Boats

Do you love Shrimps? Don’t you just go nuts when you head to seafood markets and see an array of fresh shrimps all for the taking?!

Most often, when I shop for food, the first thing I would check is the availability of seafood. Though I have a list of menu planned, Shrimps and Prawns will always take the front seat if they are fresh. I’m like a child offered a bowl of candies the moment I see shrimps and prawns. I am sure all of you food lovers feel the same way whenever you see your favorite ingredient!


I am a nut lover too! Whenever I am so stressed and tired with my day job, I snack on some nuts (mostly with chocolates) and the stress seems to be manageable. I get to relax, think and overcome the stressful situation (and people – LOL). Thinking happy thoughts does not hurt too and I open Instagram to look at hilarious (and may I say adorable) photos of bears, panda and chow chow (yes to simple joys!).


Easy recipe - Nutty Shrimp Lettuce Boats
Let me share with you one of my favorite snack or appetizer, Nutty Shrimp Lettuce Boats. Go nuts with this delicious Shrimp creation!


Nutty Shrimp Lettuce Boats
Ingredients for Nutty Shrimp Lettuce Boats
Ingredients :

15-20 pcs. Fresh Shrimps (shelled & deveined)

1 small White Onions

10-15 Shiitake Mushrooms (canned, sliced – opt for fresh if available)

Chopped Walnuts

Almond Shavings

Pecans

Dill

Romaine Lettuce (small size, think Hors D'oeuvre)

Grated Parmesan Cheese (opt for fresh if available)

Salt & Ground Black Pepper, to taste

Chili Powder (optional)


Procedure :

1)  Cut Shrimps into half an inch then season with salt and pepper, add dill. Sprinkle a dash of chili powder if you prefer a little kick. Set aside for 30 minutes for the shrimps to absorb the seasonings.

2)  Sauté onions until translucent then add thinly sliced Shiitake Mushrooms. Season with salt and pepper to taste.

3)  After a few minutes, add seasoned Shrimps and continue sautéing until cooked. Turn off heat.

Go nuts with walnuts, almonds and pecans!
4)   Go nuts when you add the chopped walnuts, almond shavings and pecans to the Shrimp-Mushroom mixture.

5)  Place a generous amount of the nutty shrimp mixture to letttuce. Sprinkle Parmesan Cheese on top and serve!

Serving Tips :

For buffet serving, you can have the lettuce in a platter and opt for separate smaller serving dish for the Shrimp & Shiitake mixture, walnuts, almonds, pecans and parmesan.
