Pinoy Food Recipe : Garlicky Pork Liempo

Majority of Filipinos are rice eaters. What’s the perfect partner for piping white rice? There are numerous Filipino dishes that would be perfect for hot white rice – Kare Kare, Sinigang na Baboy, Bulalo and the iconic Adobo. However, these are somewhat elaborate to make, so allow me to share with you an all-time hit that is super easy to create, Garlicky Pork Liempo (Garlicky Pork Belly).

Main Ingredients of Garlicky Pork Liempo

Ingredients :

½ kg. Country-style cut Pork (pork skin, pork fat & pork meat you see in layers)

1/3 cup Distilled Cane Vinegar

1 Bulb of Garlic, skinned & sliced

Premium Oyster Sauce, coating the entire pork

Whole Peppercorns (a few pieces)

Salt and Ground Black Pepper (to taste)

Coconut Oil for frying

3-4 cups of water for boiling


Procedure :

Seasoned Pork Liempo
1)    Lay pork in a sealable container. Season with salt and ground black pepper and set aside for 30 minutes.

2)  Coat pork belly with distilled cane vinegar and oyster sauce then drop in whole peppercorns and sliced garlic (up to you if you prefer pounding the peppercorns first). Marinate for 3 to 4 hours or even overnight.

3)   It’s time to tenderize the marinated pork. Boil 2 cups of water with 1/3 cup oyster sauce, ground pepper, peppercorns and sliced garlic. Add marinated pork.

Cook in medium heat until tender, adding more water as needed. This usually takes about more than one (1) hour, depending on how young the pork meat is.

Pierce the hardest part of pork meat with a knife or fork to test if it is tender.

4)    Once the pork meat in tender, let it cool. Set aside for 30 to 40 minutes.

5)   Heat pan, add oil and drop slices of garlic and fry the tenderized pork until golden brown.

*Option : Instead of frying, opt for the grilled version. Do steps 1 to 4 then grill to perfection.

Dipping Sauce :

In the absence of Sinamak, a spiced bottle of vinegar and native in Iligan, a province in the south, you can create your own vinegar sauce. Just combine vinegar, peppercorns and crushed garlic. Add some chillies if you wish.

Freshly bought garlic makes this dish more delicious and aromatic. Buy fresh garlic and choose well. Smell them if you have to and don’t buy those with dried parts.
